Remove shrimp from marinade; discard marinade. Place shrimp in clean mixing bowl; add 50 ml reserved marinade, avocado, grapefruit segments, cucumber, celery, 2 tablespoons coriander and olive oil; toss gently to combine. Season with salt and pepper.
