This brunchtime classic is light and delicious with a Florida Grapefruit twist.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>2 Florida Grapefruit<\/li>\r\n<li>600g fresh salmon fillet<\/li>\r\n<li>150g soft brown sugar<\/li>\r\n<li>150g salt<\/li>\r\n<li>1 big bunch of fresh dill (chopped)<\/li>\r\n<li>Sliced rye bread or bagels<\/li>\r\n<li>100 mL sour cream<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<p>1.Mix together the sugar and salt; then, add the chopped dill.<\/p>\r\n\r\n\r\n\r\n<p>2. Zest both Florida Grapefruit over the top and mix together well with your hands so that all the flavours get evenly distributed.<\/p>\r\n\r\n\r\n\r\n<p>3. Place a handful of the mixture onto a large piece of baking parchment, approximately the same size as the salmon.<\/p>\r\n\r\n\r\n\r\n<p>4. Lay the fish onto the salt and sugar mixture; then, cover with the remaining mix and pat it down so that all the salmon is covered.<\/p>\r\n\r\n\r\n\r\n<p>5. Fold the salmon up inside the paper and put on a plate in the fridge for 48 hours.<\/p>\r\n\r\n\r\n\r\n<p>6. When the salmon has cured, remove from the fridge and wash away the remaining salt.<\/p>\r\n\r\n\r\n\r\n<p>7. Carefully, slice the salmon nice and thin before serving with the rye bread or bagels and sour cream.<\/p>\r\n\r\n\r\n\r\n<p>8.
